Lemon Dressing


  Salad dressings are one of the easy things to make at home and you will be amazed at how fresh they taste compared to commercial dressings. This recipe for Lemon Dressing from Cuisinart is a good example of that. It is on the tart side so you might want to add a sweetener to taste. Honey would work well.
 Lemon Dressing
2 medium shallots (½ ounce each)
1 one inch strip of lemon peel
5 teaspoons lemon juice
5 teaspoons white wine vinegar
1 ⅓ Tablespoons Dijon style mustard
¼ cup olive oil
⅓ cup vegetable oil
¼ teaspoon coarse salt
⅛ teaspoon ground black pepper
Yield: about ¾ cup  Prep time: about 3 minutes
  Peel shallots and use the metal blade of your food processer until finely chopped, about 30 seconds. Add remaining ingredients and combine until dressing is thick and smooth about 60 seconds.
